Try Our Pork Tenderloin Sandwich

This month’s special burger isn’t a burger in the traditional sense. Our Pork Tenderloin sandwich is a tribute to Mrs. Zippy’s father, who passed away last weekend. An Iowa boy, the pork tenderloin was a local favorite of his. On a trip last spring, we met with an Wapello, Iowa butcher who gave us the lowdown on how to this deep fried treat. We think you’ll like it.

The sandwich starts with a pounded out and tenderized piece of center cut pork loin that is marinated in buttermilk overnight. It is then coated in Saltine cracker crumbs, deep fried, and served on a bun simply dressed with yellow mustard, pickles, and lettuce. Zippy’s Pork Tenderloin Sandwich costs $8 — and one dollar of every sandwich sold will be donated to the Alzheimer’s Association.
